No 4am alarm

Hello! How were all of your weekends? I’m sad that it’s almost time for Monday again :(

My Sunday started off nicely with a relaxing morning. i got to wake up with no 4am alarm and get ready without a rush. I didn’t want to take too long, though, because I had plans to see my brother for dinner. I thought he’d enjoy something homemade, and since I’ve been wanting to try Kristianne’s @ My San Francisco Kitchen pizza recipe ever since I saw her blog post ( <– she is so incredibly talented! check out her blog! & click here for the original recipe + instructions), I figured.. why not?! Give it my best shot.. ! :)

Thin Crust Whole Wheat Pizza – Chicken & Artichocke
(slightly modified)

What you’ll need:
  • 2¼ tsp yeast
  • 1 cup warm water
  • 2½ cups whole wheat flour
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp melted butter
  • 1 cup tomato sauce
  • 1½ cups mozzarella cheese
  • 1 chicken breast, chopped
  • 1 cup artichoke hearts, sliced in half
  • 1 cup frozen organic chopped spinach
  • 2 tomatoes, thinly sliced
  • 1 cup light feta cheese
It’s been forever since I’ve used a good ol fashioned wooden spoon to create a dough mixture as opposed to just using a stand up mixer. Working those non-existent biceps I guess.. :p

I’d forgotten how long it takes to make pizza dough, needing to let it rise…

It’s pretty sad that I’ve never tried artichoke hearts before, but I mean.. how could you possibly resist anything that has the word “heart♥” in it?! :)

Dinner was paired with an iceberg lettuce salad, makes me so excited for summer to come, when my parents’ garden is filled with such goodies to make the perfect salads all summer longgg :)

Living the exciting life…

This morning I woke up bright and early, ready to take on what could possibly be the best Saturday ever. My day included some of my top favourite activities – visiting a farmer’s market, grocery shopping, going for a run & bike ride, and fitting in some sort of baking or cooking in there. I clearly lead a very exciting life for a university student..  :p

Well actually, today there wasn’t really baking or cooking…  it was more just like.. dipping — to make these chocolate covered strawberries with friends!

Tomorrow morning I’ve got plans for some hot yoga, which is probably my favourite workout of the week because it leaves me feeling so relaxed afterwards. I’m already excited to rock my poses ;)

Now it’s time to get ready to catch some zzzz’s with my grandmotherly quilt that I love so much :D

Cold spring days don’t scare me

Hello lovely readers :D  Happy Saturday!

Even though I still have to write a transition report, and will probably be up late writing it, I still wanted to spend my afternoon catching up with my friend Arthi, and managed to squeeze in a 4k run in the morning, in preparation for the Color Me Rad run that I just officially registered for yesterday!  :)  PS: If you’re thinking about registering too, and joining the best team ever.. join team ” colour me golden ” — just showing off some Laurier pride :D

Wanted to save my appetite as I had lunch plans with Arthi @ the Raintree Cafe in Waterloo! It’s makes me so sad that I never knew about this place until just last week when I went there for a work appreciation event.

The decor is so elegant! – paintings, art, plants, wooden tables, matched-mismatched♥, vintage spoons.. lovelovelove. Not to mention the cute server ;) haha

They had a “squirrel tart” dessert — and we so badly wanted to try it for the sake of trying it for it’s name.. but apparently we aren’t that brave :o You know that feeling of wishing you had said something or done or tried something when you had the chance, but then the moment is gone? Yeahh.. feeling that now.

We’ve been having unseasonably cold weather here, and it feels like we’re still in winter :( Cold weather calls for “wintery-y” drinks, so I went for a chai latte.

There was a drink on the menu called “Tree-made iced tea”.. we were so intrigued by this haha.

Got the chipotle burger – it was really good! I’ve only tried a vegetarian burger once before a couple years ago, so I had no expectations for this dish, but was pleasantly surprised :) When I was really little, my cousin once told me vegetarian burgers were made of asparagus.. and since I am the THE MOST gullible person you’d ever meet, I believed him.. :(

After my first and second Raintree Cafe experience, I have to say that I’m hooked, and I think we’ll find ourselves there again.

I’ve got a hot date with microsoft word tonight to finish  start writing my transition report, so I’ll catch ya later! Have a great saturday! :)
