Hello! How were all of your weekends? I’m sad that it’s almost time for Monday again
My Sunday started off nicely with a relaxing morning. i got to wake up with no 4am alarm and get ready without a rush. I didn’t want to take too long, though, because I had plans to see my brother for dinner. I thought he’d enjoy something homemade, and since I’ve been wanting to try Kristianne’s @ My San Francisco Kitchen pizza recipe ever since I saw her blog post ( <– she is so incredibly talented! check out her blog! & click here for the original recipe + instructions), I figured.. why not?! Give it my best shot.. !
Thin Crust Whole Wheat Pizza – Chicken & Artichocke
- 2¼ tsp yeast
- 1 cup warm water
- 2½ cups whole wheat flour
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp melted butter
- 1 cup tomato sauce
- 1½ cups mozzarella cheese
- 1 chicken breast, chopped
- 1 cup artichoke hearts, sliced in half
- 1 cup frozen organic chopped spinach
- 2 tomatoes, thinly sliced
- 1 cup light feta cheese
I’d forgotten how long it takes to make pizza dough, needing to let it rise…
… then punching it back down..
It’s pretty sad that I’ve never tried artichoke hearts before, but I mean.. how could you possibly resist anything that has the word “heart♥” in it?!
.. and there it is! successfully made a pizza!!

Dinner was paired with an iceberg lettuce salad, makes me so excited for summer to come, when my parents’ garden is filled with such goodies to make the perfect salads all summer longgg
